Another recipe from the kitchen of my dear friend, Arindam.  A sweet recipe of Puli Pithe that was handed down to him by his mother. Puli Pithe is made during Makar Sankranti and harvest season. This recipe is a favorite and an all-time hit with Bengalis and is made typically by the Moms in the family.

Puli Pithe is a delicacy which is made in the eastern parts of Indian Subcontinent – that is, Orissa, Bengal and Bangladesh. Dumplings are made from rice flour that are filled with fresh grated coconut and fresh palm jaggery (Nolen gur) and then cooked in jaggery flavoured milk. The palm jaggery that is used in this preparation is available only in the winter months and most households buy and store Nolen gur for the entire year.

Patali  Gur

Date Palm Jaggery or Patali gur is made from the toddy of the palm tree. The toddy of date palm is tapped and then processed for producing jaggery in India, Bangladesh, Pakistan, Nepal, Myanmar, and Sri Lanka.

Ingredients

  • Rice flour 500 Kg
  • 1 Coconut grated
  • 300 gms sugarcane jaggery for filling
  • Milk 2 litres
  • Date palm jaggery (Patali gur) 200 gms

Method

Step 1

Boil the milk for 45-60 minutes till it gets thickened. Add to it the Patali gur and boil for 15 more minutes. Always add the jaggery to the milk towards the end to prevent the milk from curdling.

Step 2

While the milk is being thickened, cook the grated coconut in a little ghee for 5 min. Add to it the sugarcane jaggery, mix well and cook for 15-20 min till the mixture thickens. Keep this mixture aside to cool.

Step 3

Now knead the rice flour in lukewarm water and cover with a moist cloth and keep aside for 20 min.

Step 4

After 20 minutes, create boat-shaped dumplings from the kneaded rice flour and fill them with cooked coconut jaggery filling, close and seal with water. Make all the dumplings and keep them aside.

Step 5

By now the milk should be ready, drop the filled dumplings in the boiling milk and let it cook for 10 to 12 minutes.

Step 6

Carefully take out the Puli Pithe and serve them hot or cold
