Spaghetti with Arrabbiata sauce

Spaghetti with Arrabbiata sauce, a sauce made from tomatoes, garlic, herbs and red chilli is addictive to say the least. This rich and textured sauce with fresh spaghetti is tasty and it’s unbelievably easy to make. Traditionally this sauce is served with Penne, but I like it over Spaghetti as well.
It was a triumphant moment for us when we made fresh pasta for the first time with our new pasta making machine. Fresh pasta is easy to make, cooks faster, is healthier and is absolutely delicious. I doubt I will go back to store bought spaghetti now. For those interested, Pasta machines are now available online in India (try ebay, zansaar) and are very affordable.
Ingredients
- Butter about 6-7 Tbsp
- Red chilli flakes - 2 Tbsp (or more if you like it hot)
- Garlic, finely sliced 5 -6 cloves
- Onion finely chopped 1 medium sized
- Good quality tomatoes 5-6 medium sized ones
- Salt and freshly ground black pepper
- Spaghetti about 2 fist fulls
- Fresh Basil chopped (optional) 1 tbsp
- Fresh Basil for garnish
- Red wine - 3 Tbsp
- Cherry tomatoes -100 gms
- Parmesan cheese 3/4th cup
Method
Step 1
Heat butter in a pan, add garlic, chillies and onion. Saute till onions turn translucent. Add red wine and the chopped tomatoes and cook them till the sauce thickens a bit. Add cherry tomatoes, and let the sauce cook.
Step 2
If you are using store bought pasta, cook it as per the packet instructions. If you are making fresh pasta, drop the pasta in salted boiling water and remove it with a slotted spoon (or drain it) after about 2 minutes and keep aside. Keep 1/4th cup pasta water aside to add to the sauce.
Step 3
Once the sauce has thickened, add some pasta water to get the desired consistency and season to taste with salt and pepper. Remember the pasta water is already salted, so you will need very little salt.
Step 4
Stir most of the parmesan and chopped basil into the sauce, keeping a bit for garnish.
Step 5
Lay out pasta on a plate, spoon the sauce over it, garnish with parmesan and finely chopped basil leaves and dig in.
