This traditional UP-style garam masala is made with just four ingredients, yet it adds a subtle, aromatic depth to a wide range of Indian dishes. It can be sprinkled over a light, low-fat sabzi or used along with other spices when preparing chicken or mutton curries.

I always keep a jar of it in my pantry, and often pair it with a pinch of Bengali garam masala for an extra layer of flavour.

Ingredients

  • Black Cardamom 7 large
  • Black Pepper whole 1 tsp
  • Cumin Seeds 6 tsp or 25 grams
  • Cloves 1 tsp

Method

Step 1

Dry roast each of the ingredients separately and let them cool

Step 2

Grind everything together into a fine powder and the garam masala is ready

Step 3

Keep this garam masala in an airtight container.
