Baghara Chawal to go with curries

This flavorful rice dish goes best with meat curries but you can also pair it with vegetarian curries like paneer butter makhani or matar paneer.
Ingredients
- Basmati Rice 1 cup or about 250 grams
- Cumin seeds - 1/2 tsp
- Cloves 2-3
- Green Cardamom 2
- Cinnamon 1/2 inch stick
- Bay leaf 1
- Onion 1/4th cup chopped finely
- Ginger-Garlic paste -1 tsp
- Green chilies 2 finely chopped
- Coriander 3-4 tbsp finely chopped
- Garam Masala -1/4 tsp
- Ghee or Oil 2 tbsp
- Salt to taste
- Water (double the quantity of rice)
Method
Step 1
Wash and soak rice for 30 minutes
Step 2
In a pan heat ghee or oil (ghee would taste better) and add to it the whole garam masalas (Cumin seeds, Cloves, Green Cardamom, Cinnamon and bayleaf) and green chillies. Fry for 30 seconds and add onions and fry till they are translucent
Step 3
Add ginger garlic paste and fry till the raw smell goes.
Step 4
Drain the soaked rice and add to the pan, add salt, garam masala, coriander and water. Let the water come to a boil and cook on medium flame it with lid open for about 3-4 mins or till the rice soaks most of the water.
Step 5
Reduce the flame to minimum and put the lid on the pan and cook till rice is completely done.
Step 6
After the rice is cooked, take a fork and tease it a little so that it does not become clumpy.
Serving suggestions:
This flavorful rice dish goes best with Mutton Tavla. You can also pair it with any spicy Indian curry.
